This homemade chicken pot pie is pure comfort food.
Creamy filling, flaky crust, tender chicken, and simple ingredients that come together into one cozy dinner the whole family gets excited about.
Growing up, my grandma and I loved frozen pot pies during TGIF nights in front of the TV… and honestly, this homemade version brings back all those memories, just upgraded with real ingredients and way better flavor ❤️
Ingredients
Filling
4 tbsp butter
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1/3 cup flour
2 cups chicken broth
1 cup heavy cream or whole milk
3 cups cooked chicken, shredded or diced
1 cup frozen peas
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
Crust
2 pie crusts (homemade or store-bought)
Instructions
Preheat oven to 400°F.
In a large skillet, melt butter over medium heat.
Add onion, carrots, and celery. Cook about 5–7 minutes until softened.
Stir in garlic and cook 30 seconds.
Sprinkle flour over the vegetables and stir well for about 1 minute.
Slowly pour in chicken broth while stirring continuously.
Add heavy cream or milk and cook until the filling thickens.
Stir in chicken, peas, salt, pepper, and Italian seasoning.
Place one pie crust into a pie dish.
Pour filling into the crust.
Add top crust and seal edges.
Cut small slits in the top crust to vent steam.
Bake for 35–45 minutes until golden brown and bubbly.
Let rest 10–15 minutes before serving.
Tips
Rotisserie chicken makes this recipe much faster.
Place a baking sheet underneath the pie dish in case it bubbles over.
Letting the pie rest before slicing helps the filling set up.
Homemade pie crust makes it extra cozy, but store-bought works beautifully too.
