Garlic Parmesan Roasted Potatoes

Crispy on the outside, fluffy on the inside, and packed with garlic, parmesan, and fresh herbs… these roasted potatoes disappear FAST in our house.

They’re simple enough for a weeknight dinner, but honestly feel restaurant-worthy straight out of the oven.


And the best part? Most of these ingredients are pantry staples we already keep on hand.


Why We Love These Potatoes

Ingredients

  • Baby potatoes or Yukon gold potatoes, cut into bite-sized pieces

  • Olive oil or avocado oil

  • Garlic powder

  • Salt

  • Black pepper

  • Italian seasoning

  • Fresh garlic, minced

  • Parmesan cheese

  • Fresh parsley or herbs from the garden


Instructions

  1. Preheat oven to 425°F.

  2. Wash and cut potatoes into evenly sized pieces.

  3. Toss potatoes with oil, garlic powder, salt, pepper, Italian seasoning, and minced garlic.

  4. Spread onto a baking sheet in a single layer.

  5. Roast for about 35–45 minutes, flipping halfway through, until golden and crispy.

  6. Toss with parmesan cheese and fresh herbs immediately after baking.

  7. Serve warm and try not to eat them straight off the pan 😅


Tips

  • Don’t overcrowd the pan or they’ll steam instead of crisp.

  • Fresh parmesan melts and browns better than shelf-stable parmesan.

  • Smaller potato pieces = crispier potatoes.

  • Fresh herbs at the end make them taste extra fresh and homemade.
